    The 2013 Cabernet Sauvignon Winston Hill, which comes from a 25-acre parcel on their larger estate was named after their English Springer Spaniel who is pictured on the label. The wine was aged 21 months in 75% new French oak, and is a blend of 89% Cabernet Sauvignon and the rest Cabernet Franc, Merlot and Petit Verdot. The color is a deep ruby purple, and the wine reveals beautiful pure creme de cassis, black raspberry fruit, and a full-bodied mouthfeel. It has wonderful elegance combined with intensity, power and authority. This is a beauty, and a world-class Cabernet Sauvignon to drink over the next 25-30 years.

This monumental Napa Valley Cabernet Sauvignon is 7-8 years away from maturity and will have 40-50 years of overall longevity.

    The 2013 Cabernet Sauvignon Fay Estate-Grown comes from a vineyard established by Nathan Fay in 1961. Beautiful blackcurrant, floral-infused fruit jumps from the glass of this dense ruby/purple wine. There are some loamy underpinnings of soil, but the wine is medium to full-bodied, beautifully fruited, with great texture, and terrific purity and personality. This is a serious and beautiful wine to drink over the next 20-25 years, if not longer.

    The 2014 CASK 23 combines the signature perfume notes of FAY vineyard with the structure and minerality of S.L.V.     Named after the founder of To Kalon, H.W.C is produced from one single clonal selection of Cabernet Sauvignon within To Kalon. These vines were originally planted by Robert Mondavi, who was lured to To Kalon by the depth and richness of the wines he made from the vineyard in the 1960s. This incredibly low-yielding selection of Cabernet Sauvignon produces wines with high energy, a black-purple color, and exceptional aromatic and palate intensity—a high-resolution look at this noble variety. The inaugural vintage captures all the best attributes of 2018, with great balance, purity, and density. While not overly ripe or extracted, the wine has remarkable freshness, texture, richness, and length. Four extra months of barrel aging give it a high level of polish and a silky finish.

    The goal for our namesake wine is working with To Kalon Vineyard as a whole, crafting a wine from 100% Cabernet Sauvignon, while capturing the purity, intensity, and diversity of this special terroir. The 2019 Highest Beauty has soft tannins, plenty of structure, richness, and aromatic excitement. The grapes were harvested at night to preserve the freshness of the fruit. Careful sorting and a long, slow fermentation and maceration round out the wine and bring forward the broad spectrum of flavors and aromas inherent in this noble variety.

    To Kalon Vineyard Company’s “Eliza’s” cuvée is a blend of Cabernet Franc and Cabernet Sauvignon, two varieties that best showcase the strength and spirit of this historic site at the foot of the Mayacamas Mountains. The wine is named after Eliza Yount, one of Napa’s bestknown early pioneers, widow to the founder of nearby Yountville, and one-time owner of a quiet corner of To Kalon, on Walnut Lane, that is now home to our coveted planting of Cabernet Franc. This blend produces one of the most compelling examples of Napa Valley wine, with the Cabernet Franc bringing exotic spice notes and floral aromas, and the Cabernet Sauvignon providing weight, structure, and a deep, rich, black fruit character. The combination is rare and uniquely To Kalon—a wine that is effusive and exuberant now, but one that will age for decades to come.

    The 2019 Oakville Cabernet Sauvignon is an alluring shade of deep purple-red, concentrated all the way to the edge of the glass. From the glass, it radiates an array of aromas that includes blackberry, red currant, coffee, cocoa powder and white pepper. On the palate, the fine and chalky tannin provides an excellent balance of an initial firm grit that leads to a soft and melted finish. Flavors of sour cherry, red raspberry and chocolate invite another sip.

    Wood-grilled flat iron steak with caramelized root vegetables pairs beautifully with this wine. It is also a delicious choice with a cacio e pepe pasta, as the cheese and black pepper are a perfect match to the richness of the Cabernet.

Medium to full-bodied, it has a firm, grainy texture with a lively backbone and loads of earthy layers, long and mineral laced.     "Pedregal" means a "rocky place" in Spanish, and that is certainly a distinguishing feature of the site. This is a small, hillside vineyard on the lower slopes of eastern Oakville has iron-rich red soil. The 2016 blend is 87% Cabernet Sauvignon and 13% Petit Verdot. The Cabernet Sauvignon (Clone 7) was planted on St. George and 110R rootstock with 4' x 8' spacing in 1990. The Petit Verdot (Sterling selection) was planted on 110R rootstock with 4' x 6' spacing in 1993.

    The 2016 Cabernet Sauvignon Pedregal Vineyard from Oakville is blended with 15% Petit Verdot and offers the power and elegance of the best Cabernets from the 2016 vintage. The full-bodied palate is concentrated yet weightless, with pixelated tannins, seamless acidity and a very long finish with latent savory undertones.

    The 2020 Morisoli Zinfandel is a classic! It is cranberry red in color and blessed with a captivating nose of briar patch, orange zest, rose petals, mint, and baking spices. The medium-bodied palate is equally intriguing and expressive. Flavors of raspberry sorbetto and black plums are lifted by bright acidity and white pepper. True to form and one of the last and best examples of “mixed black” wines left in Napa Valley.

    Our 2018 Cabernet Sauvignon comes from small vineyards located mainly in the mid to southern parts (cooler regions) of Napa Valley, which only adds multiple layers and nuances that showcase the diversity of what Napa Valley has to offer. An enticing nose of luxurious red fruit, plum and raspberry leaps from the glass. Complemented by darker notes of coco powder, blueberry and creamy vanilla makes this a multifaceted wine. Our signature crimson dark red color makes our 2018 a visually stunning wine. Silky smooth tannins enhance the wine’s vibrancy and energy allowing immediate pleasure upon release but assure the potential for the development of aged complexity for the next 20+ years.

    This Cabernet is set each vintage as a Bordeaux blend, with soft and silky tannins and a plush, full mouth-feel setting it up for immediate enjoyment, although it's built to age and develop further complexity. Aromas of dried herbs, cedar, clove and lavender join flavors of dark red fruit led by figs, black cherry, currants, boysenberry, huckleberry, raspberry, and evident oak spice are joined with more traditional Knights Valley tones of black olive, wild sage and mocha chocolate. Fine acidity and balance with an elegant structure lead to a lingering, memorable finish.
